Sin Lima Mexican Lager

The SheppyBrew Brew Master published a blog article in 2014 in which he publicly declared Bud Light Lime one of the "9 Beers I don't Drink".

I'm not totally against lime. I'm not totally against Bud Light. For some reason, I HATE Bud Light Lime. Or at least I did last time I tried it.

Does it exist anymore?

"Bud Light Lime. To be honest, I don't know what it is about Bud Light Lime. I am not against lime. I am not even totally against lime in beer. I am not completely anti-Bud Light. There is just something disgusting about Bud Light Lime to me. I've tried it. I won't make that mistake again."

In 2015 ... I posted an April Fools' Day post: SheppyBrew Going Professional. One of the flagship brews of my fictional brewery was going to be "Bud Light Lime" ... which would actually be Wetta Blonde Ale

No limes.

At some point in the summer of 2020, I thought I'd resurrect the name, and brew a Bud Light Lime. 

No limes.

Light colored. Fairly light in body (for a homebrew). I wanted a fair amount of Saaz hop flavor ... which might be mistaken for lime if you had a beer called "Bud Light Lime" biasing drinkers to look for a lime flavor.

About this time, I bought a Anvil Foundry brewing system. This was my first recipe in the new system.

After brewing it once, the name didn't amuse me as much, so I decided to call it something else. 

Since it was a Mexican Lager, I decided to go with a Spanish name. Since it had no limes, I went with "Sin Lima", which google translate tells me is "Without Lime". Sounds pretty good to me.

If steeping, remove grains, and prepare to boil wort

Recipe Notes
Formerly known as Bud Lite Lime, but I decided to change the name.
No actual limes are harmed in this beer.
Make 1.4 liter (6 cups) yeast starter a day before brew day.
Brewing salts in the mash water. This should bring Denver water profile (as defined by BeerSmith) to
Ca=85,Mg=8,Na=21,SO4=145,Cl=72,HCO3=104
Acid addition based on BeerSmith predicted pH. Should lower from 5.8 to 5.4.
Brew as directed from recipe.
Cool wort to as close to 50 degrees as possible.
Add dry hops to the fermentor before pitching yeast. 
Ferment in 50's for about 5 days, let rise to high 60's for another week.
Keg carbonate.
