Dudocs Dark Mild

2021 Learn to Homebrew Day.
My friend "Doc" hosted a Learn to Homebrew Day at his house, and my friend "Du" and myself gladly accepted the invitation.

I had a pack of Lallemand Voss Kveik Ale Yeast in my fridge that I wanted to use up.
I picked hops I had in my freezer too rather than buying any.
To save time while brewing with my friends, I planned for a 30 minute boil. I decided to start the mash on my drive over to Doc's house.
As I've mentioned many times on the blog, the simpler the recipes the better when I brew with other people.
The beer turned out good.
It certainly wasn't real complex. It was nice, drinkable, straight-forward. It has nice notes of dark chocolate and caramel without being too sweet or thick.
It finished dry and very drinkable. I think the voss yeast gave a hint of lemon / orange pith esters, which pushed the dryness.
With the low alcohol, I tend to drink lots in a sitting and am sure I will finish it quickly.

If steeping, remove grains,
and prepare to boil wort
Brewing salts in the mash water. This should bring Denver water profile (as defined by BeerSmith) to
Ca=89,Mg=8,Na=21,SO4=51,Cl=126,HCO3=104
Boil and add hops as instructed above.
Chill as close to 80 degrees as possible. Pitch voss yeast.
Ferment at room temperature for 1.5 to 2 weeks.
Keg and chill. Carbonate and enjoy.

Brewing Notes
11/6/2021 Got my grains yesterday. Brew day at Doc's today. Packing up my brew stuff to travel. Learn to Homebrew Day.
11/7/2021 Brew day was fun. Lots of beers were had during the brewing, but I got the brew steps all done. Ended up with 1.037 OG.
11/8/2021 Tilt says 1.007 at 71 degrees.
11/11/2021 Tilt says 1.006 at 69 degrees. Based on past experience, this probably means 1.009 or so, which is a little higher than predicted FG, but I think I should be kegging this soon.
11/13/2021 Kegged. 1.009 FG. 3.7% abv. Sample is nice. Notes of caramel and dark chocolate with maybe a touch of roast. Comes across dry and maybe a bit thin. Nice simple session beer. Can drink it by the liter or the pint. Not getting much of the lemon pith esters from the voss yeast.
11/21/2021 Keg finally in the beer fridge after Rocktoberfest kicked. Beautiful dark brown. Needs some carbonation, but very close to being ready to drink.
11/24/2021 After the Falling Leaves blew, I moved this to kegerator. It is now nicely carbonated. Really thick long lasting head. Nice simple drinkable beer. Can drink lots without worrying about getting too drunk. Darker color than I was expecting, but that's not a big deal.
1/1/2022 Killed the keg last night. Nice beer while it lasted.
