Dudocs Red IPA
Brewed: 11/5/2022 Kegged: 11/19/2022

I had some harvested Voss yeast I wanted to use up before the weather got too terribly cold, and I had a bunch of Talus hops that I wanted to use.
Seemed like an IPA would be perfect.
I had been looking at blog posts of Pompously Illegitimate Red Ale, which I had brewed years ago as a tribute to Stone's Arrogant Bastard, and I got it in my head that I would enjoy a Red IPA on tap.
So that is what I brewed.

And ... I could not expect anything more from the resulting beer. It turned out awesome. Great tropical hop flavor with just enough malt flavor to make it more than a "typical" IPA.
It was a little higher in ABV than I hoped for, but I can't complain about that.
Great hoppy beer.

Brew on Learn to Homebrew day at Doc's Brewery.
If harvesting yeast, make a 6 cup starter a few days before brew day.
Brewing salts in the mash water.
Ca=107,Mg=18,Na=21,SO4=233,Cl=23,HCO3=104
Acid addition to bring calculated pH around 5.4
Brew as directed from recipe.
Cool wort to below 90 degrees and rack into fermentor.
Ferment as warm as possible for 5 days.
Add dry hops to beer as soon as signs of fermentation start.
Keg. Force carbonate.

Brewing Notes
11/5/2022 Brew day today at Doc's Brewery. Not sure the exact og. But I think it was 1.065ish.
11/6/2022 Fermentation took off strong overnight. Put in blow-off tube this morning.
11/7/2022 Still going strong, but the kraussen is already starting to fall. I guess I didn't actually need the blowoff tube but better safe than sorry.
11/16/2022 Beer looks and smells awesome. Need to clear out a keg for this beer.
11/19/2022 Kegged. Fruity hops. Added an ounce of dry hop talus into keg. 1.009 fg makes this a 7.4% beer. Also got almost a gallon extra in a growler.
11/24/2022 Yummy. Nice beer while cooking the turkey. Starting to look more red than brown.
12/10/2022 Nice and hoppy. Great malt backbone. Great head. Beautiful dark red. Clear. Wonderful beer.

1/6/2023 Still going. Still fantastic at 1.5 months old. I might try to finish this up so I can defrost the kegerator.
