Fat and Stoopid Amber Ale
Brewed: 3/26/2011 Kegged: 4/23/2011

Until I started draining the wort from the cooler. I got (horror of horrors) a stuck sparge. Gosh darn it, I couldn't even drain all the first-running's. So, I had to scramble. I dumped my grains into a grain bag and steeped them in what was supposed to be my sparge water. But, I guess I had way too much sparge water because I ended up with way too much wort. Plus, some of my grain ended up in the boil pot because I was trying to dump it in the bag by myself.
At this point, I decided that I was not going to make "Phat & Tyred". Because of the thin wort, I decided to boil longer. And, I ended up adding some "left-over" LME to the batch. I quickly made a new profile in Beer Smith to sort of model my whole brewing experience. Then, rather than use the hops I had purchased for Phat & Tyred, I went with left-overs.
The recipe below approximates how everything ended up, but if this beer turns out awesome, it is going to be hard to screw up like this again.
This was the first batch of beer that I kegged.

My first corny keg. Carb with 12 PSI @38F for 5 to 7 days.
Brewing Notes
3/26/2011 Meant to make <a href="/recipes/phat.aspx">Phat & Tyred </a> but things went badly and I had to improvise. Thank goodness for Beer Smith. I think I ended up making a pretty good beer, but won't know until it is ready to drink.
3/27/2011 Big kraussen and air lock is bubbling away today. Temp at 60.
4/4/2011 Took a gravity reading and sample taste. 1.012 or so. Nice APA or amber ale flavor. Not much hop aroma.
4/19/2011 Purchased a 5 gallon corny keg to "bottle" this batch in. Not sure if I'll sugar-prime or just pressurize to desired carbonation.
4/23/2011 Kegged it up. Soooo much easier than bottles. Although, I'm not sure I saved time today. Sample was wonderful. A bit on the bitter / hoppy side of balanced. Exactly what I was going for. Pressurized the keg to a little under 30. Not absolutely sure when I'll put this in the kegerator.
4/24/2011 Tried one just for the fun of running the tap. Tastes good. Still not fully carbed, but not completely flat. So exciting.
4/25/2011 Tried another little sample from the tap. Still not fully carbed, but might be a little less flat. Temp down to 37. I do like the biscuit flavor with the centennial hops. Very good amber ale.
4/29/2011 Still doesn't seem fully carbed to me. I bumped up the pressure a bit. See how it tastes tonight.
5/5/2011 Been drinking. Seems carbonated abut right, but I am still getting a bit of foam.
6/2/2011 Well, I did not realize we were so close, but the keg ran out tonight. Bummer.
