Ale to the Chief: Honey Ale

Both recipes were extract batches, and as of the time that I entered this recipe, I had not seen all-grain versions posted. They may have been out there, I just had not seen them. I decided to convert the recipes to all-grain.
I had already posted the Honey Porter recipe back in September. I only got around to the Honey Ale recipe in November. The recipe that the White House sent out left some room for interpretation, but taking some liberties, I came up with in an all-grain conversion.
When I first converted this one, I didn't think I'd ever brew it, but finally in February of 2015, I decided to give this a try. I did resize my batch by about half to a Mr. Beer Sized batch.

Feel free to leave comments about the recipe below. As I mentioned, I made assumptions on OG / ABV and boil volumes that are probably not right. If you have better information (or even have speculations on this stuff), I would love to hear it.

Recipe Notes
For the first flavoring, add the 1 1/2 oz Kent Goldings and 2 tsp of gypsum. Boil for 45 minutes.
For the second flavoring, add the 1/2 oz Fuggles hop pellets at the last minute of the boil.
Add the honey and boil for 5 more minutes.
Add 2 gallons chilled sterile water into the primary fermenter and add the hot wort into it. Top with more water to total 5 gallons. There is no need to strain.
Pitch yeast when wort temperature is between 70-80°. Fill airlock halfway with water.
Ferment at 68-72° for about seven days.
Rack to a secondary fermenter after five days and ferment for 14 more days.
To bottle, dissolve the corn sugar into 2 pints of boiling water for 15 minutes. Pour the mixture into an empty bottling bucket. Siphon the beer from the fermenter over it. Distribute priming sugar evenly. Siphon into bottles and cap. Let sit for 2 to 3 weeks at 75°

Brewing Notes
2/20/2015 Bought ingredients today. Should brew this weekend.
2/23/2015 Brewed Saturday. Been going well. Lots of trub in this batch.
3/7/2015 Bottled today. 2oz of table sugar. FG higher than I expected at 1.018. 5.8%abv. Sample was pretty good. Lots of yummy fuggle flavor. Will probably let these condition more than just the typical 2 week carbonation period.
3/7/2015 Ack ... sorry 6.1 on the abv.
3/31/2015 Put on labels. Also put 6 12oz bottles and the PET in the fridge. Will probably try this weekend.
4/2/2015 Tried the liter bottle. Pretty good. This is the type of beer the Beer Model will probably like more than I do.
4/26/2015 Inconsistent carbonation is the only real issue with this beer.
5/27/2015 Had a bomber. Tasting good tonight. GoBlackhawks!
6/13/2015 Had what I think is my last bomber. Good. Lets go Blackhawks.
