Sunny Pineapple Wheat
Brewed: 7/6/2014 Kegged: 7/19/2014

I went to the LHBS with the base of Summer Lovin' Wheat as the recipe, but this new place didn't have any honey malt. I decided to just substitute a crystal 15 into this recipe. Just as I had done with the Un-Wheat, I decided to get my fruit flavor from frozen juice concentrate, this time pineapple orange juice.
Should be ready to drink in late July / early August. I do believe this will be a wonderful summer ale.

Recipe Notes
Mash grains as specified.
Boil wort adding hops and yeast nutrient as specified.
Cool to as close to 60 degrees as possible to pitch.
Ferment under 65 for a couple of days, then let heat up to about 70.
Move to secondary after one week on thawed Pineapple Orange Juice concentrate.
Total fermenation time 2 weeks.
Keg and force carbonate. Drink when ready

Brewing Notes
7/7/2014 Brewed yesterday. Note that the OG is 1.045, which is much less than planned. The "planned" has the concentrate in it, though so actually the OG is a bit higher than planned. Fermentation is going well today. Might need a blow-off tube.
7/7/2014 Afternoon blowoff. Came home from work with the airlock off and kraussen pushing through carboy top. Didn't make too much of a mess. Temp up to 68.
7/8/2014 Well, the fermentation really slowed down and the temp is now in the 63 range. Took a gravity reading. The beer is at 1.014. It tastes really good. A little lemony flavor. Think I may move to secondary a bit early.
7/14/2014 Saturday, added one can of pineapple. Needed blowoff tube. Took a taste today. Tasted like it could use more. Decided to add another can. Have to let it thaw, so addition will be tomorrow. Gravity at 1.012.
7/19/2014 Kegged today. Gravity was still at 1.012. Could not really taste the pineapple, so added second can of concentrate in the keg. Not sure if this will bring up the flavor to recognizable or not. Tasty bases beer. Will leave this at room temp for a few days to let the juice ferment.
7/24/2014 Yesterday put into fridge to chill. Today, I am putting into keggerator under high (20ish) psi. Took a sample. There was a fair amount of pineapple sweetness. Not sure I should have chilled it yet. It was also very foamy, but not really that carbonated. Will have to try it again in a couple of days.
7/25/2014 Trying again today. Less pineapple sweetness. Actually pretty good. Needs more carbonation.
8/4/2014 Lots of foam, even though it doesn't really seem all that carbonated. Also pours very slowly. Assume there is sediment clogging things up. Might have to rack into a new keg.
8/5/2014 Racked into another keg. There was lots of gunk. Surprised any beer was coming out. There actually isn't a whole lot left. Less than half the keg.
9/1/2014 At this point, I'm trying to drink this upto make room for Near-Sighted Swine.
9/4/2014 The keg kicked tonight. That is great, because it means I can move the hail storm into the keggerator. It also means I have an open keg for Near-Sighted Swine.
