4g gypsum in the mash water. This should bring Denver water profile (as defined by BeerSmith) to
Ca=59,Mg=8,Na=21,SO4=116,Cl=23,HCO3=104
Hydrate yeast.
Brew with single infusion mash. Add finishing hops in hop sacks and leave them in for wort cooling.
Cool as close to 50 degrees as possible, using ice bath around fermentor if necessary.
Ferment for 2 weeks at as close to 55 degrees as possible.
Carb in keg.

There is a good amount of kraussen on the top of the beer, but the airlock activity seems really slow. This is the first lager I've done with an airlock, so maybe this is just how it always is. Temp is in the mid-50's.

Was away for a few days. When I left, temp was at 55. When I got back, low 60s. Kraussen almost all gone.

Took a sample. 1.012 FG puts this beer at about 4.7% ABV. Real pale color. Still a bit of haze. Love the taste, although I thought the hops were going to pop a bit more.

Kegged. Also filled 11 12 oz bottles, 2 bombers, an a liter bottle. Loved the malt flavor. Think next time I make this I should dry-hop for some more hop aroma. The color is the palest that I have ever brewed. Keg is sitting warm at 30psi for now.

Put the keg in one of my large coolers with frozen milk jugs of water to get it cooled down. Need to finish up Wetta Berry so that I can put this in the keggerator.

Put labels on the bottles and placed one of them in the beer fridge. Will have to try it this weekend.

Tried my first bottle. Great tasting. Really light in color, but hazy. Great head formation and retention with a thick white foam. Really high in carbonation. Wonderful beer.

Took keg out of cooler and into the keggerator. Extremely foamy, although carbonation seems about right. We will see how it is after cooling some more. Wonderful pilsner flavor. Wish I knew what to do about the hop haze.

Tried a couple samples from the keg last night. Absolutely fantastic flowery hop flavor and aroma. Very nice. Foam much more under control.

Had a few while watching the stupid Bears lose to the stupid Packers. Really good beer, and nice and sessionable. Turns out the Beer Model really likes this too. Apparently it is not to hoppy for her.

My friend "Billy" finished the keg off. Man, this was a good beer. We do still have bottles.
