Clan DunBroch Scottish Ale
Brewed: 5/4/2024 Kegged: 5/10/2024
In April of 2024, after brewing McShepardSons Irish Ale (Batch 352), I thought I'd like to do another "Roll-a-Style" beer.
My most recent list was on Roll-a-Style 1 ... 3A. Czech Pale Lager, and I rolled an:

11 corresponded with 14C. Scottish Export.

See Sheppy's Blog: Roll-a-Style 11 ... 14C. Scottish Export
I asked ChatGPT to come up with a recipe and a name. I followed the recipe with minor tweaks.
See the ChatGPT Session to read how the conversation went.
Before this recipe, my only other Scottish Ale was Mor'du Scottish Ale, whose name was inspired by the Pixar movie "Brave". I decided to follow that theme and take another name from that movie.
Clan DunBroch is the clan of which Merida and family were members of. I thought the name "Clan DunBroch Scottish Ale" worked well.
If you don't like the name, you can name your Scottish Ale whatever you like.
The taste of Clan DunBroch is a symphony of malt-forward goodness. The foundation is laid by a robust malt backbone, offering flavors of biscuit, toffee, and roasted grain. Despite its malt prominence, it maintains a delicate balance, with just a hint of earthy hops providing a gentle bitterness to round out the profile.
Medium-bodied and smooth on the palate, this Scottish ale delivers a satisfying mouthfeel that invites contemplative sipping. Its moderate carbonation enhances drinkability without overpowering the nuanced flavors, making it a perfect companion for leisurely evenings by the fireside or gatherings with friends.
1st brewed on 2024 Big Brew Day at Du's Brewery.

Brewing Notes
4/23/2024 I think this will be my Big Brew Day batch.
5/3/2024 Brew day tomorrow up at Du's Brewery. Prepping a bit tonight. May the Forth be with You.
5/5/2024 Brew day at Du's yesterday went really well. OG right on plan. Just getting fermentation signs mid-afternoon today. Going in pressure fermentor.
5/6/2024 Going strong. I have the spunding valve on ... but I have it set to very little pressure. Maybe 1 or 2 psi. Temp strip says 68ish. No tilt because it is in the Helles Bock fermenter right now.
5/7/2024 Krausen gone. Beer looks real clear. Even though the spunding valve has been completely open, there is off-gassing through the beer. My calendar has me kegging this in 11 days. However, I might be kegging this beer early. It appears to be done and I have empty kegs.
5/10/2024 Kegged. 1.010 FG, which is a little low compared to planned. 5.4% ABV is actually perfect. Nice red color going into the keg. Yummy malty beer. Can taste the EKG. A little roast.
5/12/2024 Love love love the color. Deep red and already fairly clear. Great tan head, although it will be better with a little more carbonation. Wonderful medium body. Awesome flavor. Reminds me a lot of McShepardSons Irish Red. Maybe a bit more richness and perhaps a touch of roast. EKG hops give it just enough floral finish to let you know it's there. Pretty balanced. A little caramel sweetness, but really just enough to add to the rich complexity. Wonderful beer.
5/15/2024 Poured a pint before the Avs game. Thick foam. Nice cascading effect. Great malt flavor. Beautiful deep red color. Love it.
5/24/2024 Gorgeous deep red beer. Great thick off-white creamy head. Great caramel malt flavor with just enough EKG to balance it out. Love the Irish yeast flavor.
6/6/2024 Checked into untapped during halftime of the NBA Finals. Great beer. Touch of roast? Crystal clear. Gorgeous red.
6/13/2024 Yummy. Deep ruby red. Clear. Malty. Yummy.
6/17/2024 Had my wife's parents visiting this past weekend. This was their favorite of what was on tap.
6/19/2024 When I kegged Summer Lovin, I felt this keg. It doesn't appear to have much left.
6/27/2024 Gorgeous ruby red. Very clear. Wonderful caramel malt bill. A little foamy when pouring after sitting for a bit. Second pour perfect.
7/7/2024 Yummy. Red red red. Nice and malty.
7/18/2024 Most gorgeous beer I've had in quite awhile. Ruby red and crystal clear. Thick head. Caramel with a touch of roast. Toasty. Not too sweet. Won't last much longer.
7/26/2024 Still going. Wonderful thick, creamy white head (just slightly off-white). I've referenced the beautiful red color a bunch, and I'm still loving it. Great malt flavor without being too sweet. Love the beer.
7/28/2024 Keg kicked as I was pouring a pint. Ended up filling the rest wit Summer Lovin'. Loved this beer while it lasted. Need to keg Hail Storm now.
