Falling Leaves Autumn Saison

Seasonal Saisons. I have established a seasonal (Saison-inal) series of beers.
I brewed a Winter Saison. I missed the Spring Saison, but I brewed the Summer Saison.
In October of 2014, it was time to brew a Autumn (Harvest) Saison. Of course, I had to use French Saison Wyeast Labs #3711 (aka the REAL super yeast) to get that nice, dry, farmhouse/harvest ale character that I have come to expect and enjoy from my saisons.
For the Autumnal member of the series, I originally planned to include a variety of pumpkins and other gourds / fruits / vegetables aka harvested produce. Like my other Seasonal Saisons, it was not designed to be very high in alcohol.
I was hoping to incorporate fresh hops as well, but the person I was counting on supplying them didn't come through.
The Autumn Saison is darker in color than the Summer Saison and lighter in color than the Winter Saison.
It turned out wonderful. A nice brown looking beer, but still very saison-like. It didn't take me long to finish this beer.
I will brew it again next Autumn and the next and the next.
Batch 8 was the first time I brewed this in the Anvil Foundry.

If steeping, remove grains,
and prepare to boil wort
Make 6 cup starter with 3 cups DME.
From Denver water, 112g gypsum puts my water profile at
Ca=115,Mg=8,Na=21,SO4=252,Cl=23,HCO3=104
Acid addition to bring expected mash pH to 5.5
Mash overnight in the Anvil Foundry
Boil and add hops as instructed above.
Chill as close to 75 degrees as possible.
Keg. Carbonate. Enjoy.

Brewing Notes
8/26/2024 Updated recipe with lower AA%, but exactly the same otherwise. Will most likely brew mid-September.
9/19/2024 Ordering the ingredients from the Brew Hut. Making the recipe a little smaller this year, mostly because the order form on the website makes it easier to order full pounds.
9/21/2024 Picked up ingredients. Brewing tomorrow?
9/22/2024 Brew day today got started much later than usual and didn't finish until almost 3pm. Everything went well. High OG 1.056.
9/23/2024 Was bubbling before bedtime and is rocking this morning.
9/24/2024 Going strong, but slowed down some.
9/25/2024 Bubbling slowed down to once every several seconds. Still thin layer of krausen on top. Needs to clarify quite a bit. At least a week to 10 days until I'll keg.
9/30/2024 Pretty much no bubbling. Just some krausen "dots" on the top of the beer. Seems pretty clear now. Will probably keg sometime this week.
10/3/2024 The same. I cleaned my empty kegs yesterday. Need to get this kegged after 1519.
10/7/2024 I was going to keg over the weekend, but never got around to it. I'm getting low enough on my beer supply that I need to work the pipeline. Step 1 is getting this on tap.
10/9/2024 Kegged. FG 1.003. Sample tasted about what I expect from the Autumn Saison. Chilling on right side of kegerator.
10/12/2024 Been sitting a couple days. Looking and tasting fantastic. Could use more carbonation, but man is this a great beer.
10/13/2024 Took a gallon down to Bro Greg's. People really liked it.
10/18/2024 Been drinking. Think the carbonation is just about right. Been sort of foamy, which made me "slow pour". However, I think we're past that now. Great beer. Running low on other beers, so I expect this will be my go-to for the next couple of weeks at least.
10/31/2024 Pouring really nice. Ready for Learn to Homebrew Day. Oktoberfest of French Saisons. Yummy.
